I turn on medium low heat and let the eggs cook. I spray the inside with high heat PAM, and then crack and egg inside. You should also use an oven glove picking them up from the stove, the small size and the iron handle is too short so it will get very hot. They make quality products. I also got the small size version of these (these are minis), that size is perfect for making those skillet breakfast meals like at IHop. This one is a bit small for that application, but it does have one other in a pinch, I you don't have trivets, you can use these to put a hot pot or pan on to save your counter from scorching.

It is not very deep, so putting some brownie mixes or cookie doughs in it may make the food rise above the edge of the skillet while baking. Great material, and I've encountered no problems with the skillet itself. It's very good for making servings for just one person in each skillet, so you won't be overly full.
